Hand Hygiene:
The CAC defines hand hygiene as the practices and procedures used to clean and disinfect the hands of food handlers in order to remove dirt, grease, and microorganisms, thereby preventing the potential contamination of food products.
This includes:
- Thorough handwashing with clean, running water and soap, followed by drying with single-use towels or a hot air dryer.
- Hand sanitizers or rubs are used when handwashing facilities are not immediately available.
- Maintaining clean, trimmed, and unpolished fingernails.
- Avoid wearing jewelry or other items that could harbor dirt or microorganisms.
Foot Hygiene:
The CAC defines foot hygiene as the practices and procedures used to clean and disinfect the footwear of food handlers to prevent the introduction and spread of contaminants within the food production environment.
This includes:
- Wearing dedicated, clean protective footwear (e.g., boots, shoe covers) when entering and moving within the food handling and processing areas.
- Disinfecting footwear by stepping through foot baths or sanitizing mats containing appropriate disinfectant solutions at designated entry points.
- They maintain the cleanliness and effectiveness of the foot hygiene stations through regular monitoring and replenishment of the disinfectant solutions.
The CAC emphasizes that proper hand and foot hygiene practices are essential to food factory workers’ overall personal hygiene requirements to ensure food safety and quality.
