Cleaning and sanitizing before entering the processing workshop refers to a series of cleaning and disinfection activities that food handlers perform before entering food production, processing, or service areas to ensure food safety and hygiene. This process includes steps such as personnel hygiene including hand washing, wearing personal protective equipment, disinfection of hands and other food contact parts, foot disinfection, and air shower or air purification.

Here, we are going to talk about the cleaning and disinfection process for food factory processing room entry.
1. Entering the changing room
The process starts with employees entering the designated locker room. This area is specially designed to separate casual clothes from work clothes, minimizing the risk of introducing contaminants into the food processing area.

 

A. Personal belongings
After entering the locker room, employees should first put away their personal belongings.
– Lockers: Each employee should have a personal locker where they can store coats, bags, and personal belongings. This practice prevents external contamination and keeps the locker area organized.
– Designated areas: Use clearly marked areas to place items to ensure that personal belongings do not interfere with the sanitation process.

 

2. Change into Work Clothes and Shoes
Then, employees should change into clean work clothes and shoes by following the steps below:

A. Changing Clothing
– Clean Uniforms: Employees must wear clean factory-issued uniforms or work clothes specifically for food handling. This helps reduce contaminants from external clothing.
– Work Shoes: Employees should wear dedicated work shoes that can be easily cleaned and disinfected. These shoes should be left in the changing area and not worn outside the facility.

B. Personal Protective Equipment (PPE)
– Donning PPE: After changing into work clothes, employees should don any required personal protective equipment such as hairnets, gloves, and masks in designated areas. This step is critical to further reduce the risk of contamination.

 

3. Entering the Decontamination Room
After changing into clean clothing, employees enter the decontamination room for personnel cleaning and disinfection. This step is critical to ensure that all potential contaminants are eliminated before entering the workshop.

A. Hand Hygiene
Handwashing:
Employees must wash their hands thoroughly with soap and warm water at a designated handwashing station. This process should include:
a. -Rinse hands under running water to remove any visible debris.
b. -Apply soap and lather for at least 20 seconds, making sure to scrub all areas, including the backs of hands, between fingers, and under nails.
c. -Rinse hands thoroughly under clean, running water to remove all soap and contaminants.

 

B. Hand Drying and Sanitizing
– Hand Drying: After washing hands, employees should dry their hands using disposable paper towels or an air dryer. If using paper towels, use them to turn off the tap to prevent recontamination.

– Hand Sanitizer or Sanitizer Spray: Employees should apply alcohol-based hand sanitizer (with at least 60% alcohol) to all surfaces of their hands or use a hand sanitizer, rubbing until dry. This step adds an extra layer of protection against microorganisms.

 

C. Foot Sanitization (if necessary)
– Footbath or Sanitizer Mat: In some facilities, there may be a footbath or sanitizer mat at the entrance to the sanitization room. Employees should step into these devices to ensure any contaminants on their shoes are removed before entering the room.

 

4. Final Check and Entry
Before entering the workshop, employees should conduct a final check to ensure that:
– Appropriately Dressed: They are wearing clean work clothes and personal protective equipment.
– Washing Hands: Ensure that hands are properly washed and sanitized.
– Follow Procedures: Ensure that all necessary steps in the cleaning and sanitization process have been followed.

Once all checks are completed, employees can enter the workshop ready to engage in food processing activities while reducing the risk of contamination.
